If you are anything like me, these days are just running together. I wanted to remind you all that Father's Day is Sunday, June 19th. I think we can all agree that dad is the glue that holds everything together. Sometimes it's hard to find the perfect gift for someone that means the world to us.

Spring is so close I can almost taste it! Okay maybe not taste spring exactly, but things that go along with spring like grilling on the patio. The birds have already started to make their way back and are chirping and we are supposed to have temps hit the 60's this week here in Indiana. So this girl will be going into full spring mode in no time! And that means lots of cooking, cleaning, and getting outdoors for this family!

I've been trying to work on getting myself back into shape again, and that means altering my eating habits. I actually find in the summer it's a little easier to do because I have lots of fresh vegetables right in my back yard. I love vegetables so this works out great for me. Get Cooking with the Simple Grillin' BBQ Grill Mat #SimpleGrillinBBQMat

We like to cook on the grill, but like many don't enjoy the clean up afterward. We'd talked about trying out grill mats, but weren't sure we wanted to make the investment just in case they didn't really work as well as they claimed. So when I got the opportunity to try this one I decided it was time to make the leap and give them a try. So far we have used it to cook hamburgers on our gas grill and had good results. The burgers didn't stick to the mat like food sometimes does to foil if you don't spray it good first. Or to the grill grates if you cook directly on them. That's because the mats feature a Non Stick Teflon (PFTE) surface. The mats are sturdy and very well made. After the grill cooled down I just wiped off the mat and used warm soapy water to clean it making it ready for the next use. You can also run them through the dishwasher if you like. I'm looking forward to trying these again when we go camping this spring on our charcoal grill too. Oh how it would save on foil costs and stuck on foods on the grill!

Spicy Tomato Burger
1 lb ground beef
14.5 oz can of Red Gold Tomato w/Green Chilies
Salt and Pepper
Option: Pepper Jack Cheese

Combine beef & tomatoes (drained). Form into patties. Season. Add cheese to center of each patty for an added kick. Grill.
As desired, serve on toasted bun. use Jalapeño Ketchup or Chipotle Mayo. Layer spicy peppers.
