Just by looking at this photo you would think you were looking at an ordinary dinner plate with a scoop of mashed potatoes and sweet potatoes. Well let me fill you in, neither one is what it seems from the outside. This meal is the victim of a "veggie exchange". I can't think of an instance off the top of my head where we had a veggie exchange. A few years ago my wife read that you could substitute a banana for eggs in a recipe, so she tried it, and it didn't really work!!

ReplyDeleteWe actually have done the cauliflower for mashed potatoes. The first time, my husband did it on a whim his own way and it was disgusting. We all made faces at each other quietly trying not to hurt his feelings until eventually I couldn't take it anymore and had to say something. About a week later I found a recipe for doing them and made then and they were way better. The trick was adding a little corn startch to thinken them.
