Tapping Season:
Maple Tapping season starts around mid-February and can last through mid-April and really depends on where you live. For the most part, regions that can tap trees are: the Midwest, the Northeast, and the northern half of the Atlantic Coast. The big key to collecting sugar maple sap is that the tree must go through a freeze/thaw cycle almost daily. Temps fall below freezing at night and then rise above 40ish during the day which causes the sap to flow. This weather pattern is what happens in late winter in these regions. Also, sap is only sweet-tasting until the buds pop out on trees – again a situation that happens mostly in those areas. We’re not discouraging anyone from trying it out but their finished syrup may not taste very good if they’re in the wrong part of the country.
