My Take:
I used the Carapelli 100% Italian Extra Virgin Olive Oil on spinach salad along with some dried cranberries and croutons. It had a nice smooth flavor, not overwhelming and strong like some oil based dressings can have. Really unless you had actually seen me pour it on you wouldn't have known that is what I used. I like the flavor of it on my salad and it's good for me too! We had already been switching to olive oil in many dishes to help with our weight loss, but I had never thought of putting it plain on salad. The Italian component of this olive oil gives it just the right amount of flavor though, and paired with the dried cranberries it was great. And now that I have the handy conversion chart I can start using my olive oil more in my cooking.

Olive oil can make a very nice substitute for butter. I now prefer it to butter for everything, even on toast. There is an olive oil that enhances any food.
