My kids love to color, and well actually I do too. My favorite part about coloring is that you can be as creative as you want. I have always tried to teach my kids to express themselves in everything they do. And just because the sun is usually yellow doesn't mean their sun has to be yellow. Sometimes being creative makes things like coloring a lot more fun and it's neat to see what you end up with when you don't try to make it color coordinated with real life objects.
